Tuscan organic extra virgin olive oil: the qualities

Tuscan organic extra virgin olive oil
Il Casellino has been a rural village for centuries. Here, the olive cultivation has its roots since time immemorial. An authentic experience that preserves the DNA of the territory. and pushes us to continue cultivating our olive groves and producing our oil with the same passion as ever. The “Campo di Torri” label is synonymous with a sophisticated product that can stand out for its unique organoleptic qualities as well as for the production method that respects the plant.

Our extra virgin olive oil is synonymous with authenticity.

Entirely produced on the territory with organic methods, it is certified by ICEA – a guarantee of environmental sustainability and biological methods.
The choice to comply with stringent agricultural and production standards pays not only in ethical terms but also in terms of the quality of the final result. Our “Campo di Torri” oil stands out for its scent with herbaceous hints as well as for its gentle but characterful taste. Our offer also includes chilli and truffle flavored oils.
To achieve such a valid result, it is necessary to take care of the plant at every stage of cultivation. Our olive trees grow following the natural development processes. We adopt the “stripping” method, which means that we collect the fruit manually, directly from the branches. Although more laborious and expensive, this choice allows you to better preserve the plant and always have fresh olives.
Once the daily harvest is finished, we bring the olives to our mill in a few hours. This allows to preserve all the organoleptic elements and the fullness of the fruit. The olives are washed with clear water and prepared for cold pressing. Once again, this process maintains the organoleptic characteristics of the oil, the amount of minerals, vitamins and antioxidant substances for the body unaltered.
